A Kiridashi (切り出し) is a traditional Japanese utility knife which features a single bevel blade. Kiridashi feature a single-bevel, sharply pointed blade, which provides exceptional control for precise cuts. This knife has a laminated steel blade meaning the cutting edge is a very hard steel to keep a good edge whilst the rest of the knife is a slightly softer steel that can handle pressure without breaking.
A shaving sharp carbon steel edge allows ultra clean cuts for fast healing and successful grafts. The blade is ground at a very shallow angle that means a minimum of flexing at the incision point which again aids wound recovery.
Do not use the point for leverage, this is a precision cutting tool not a mortice chisel!

Only sharpen Kiridashi using fine grade water stones. Most diamond sharpeners are too coarse and will ruin the edge as will soft abrasive cleaners.
